Although Dingle Distillery is one of Ireland’s newest craft spirits producers, they’ve wasted no time releasing exceptional whiskeys like this bottle, their latest single malt offering aged in a combination of bourbon, Pedro Ximenez, and Madeira wine casks. The product of three bespoke copper pot stills and a unique microclimate on Ireland’s southwest coast, this single malt exudes a lovely seaside charm. The aroma of salted caramels and lemon biscuits gives way to a palate bursting with juicy raisin and bright red berries. The finish is oily and gently warming with vanilla cream and a touch of dried stone fruit.
