The Bay of Fundy in Nova Scotia is considered one of the seven natural wonders of North America, producing the highest tides on earth, sheltering some of the rarest whales in the world, and giving name to this unique and delicious gin. More than that, this gin actually passes over Bay of Fundy beach stone on its way to being triple distilled and flavored with eight different botanicals, including locally sourced dulce (an edible type of seaweed). The result is a beautifully built and unsurprisingly coastal gin with a bright, silky aroma of dried herbs, lemon peel, and a touch of earthiness that truly does evoke sea mist. The palate is clean and crisp and classically juniper-forward with a subtle savory quality – a bit of salty ocean air, perhaps – that compliments sweeter citrus and licorice notes. A lovely gin, perfect for your next coastal or landlocked cocktail.
