Aqua Ignis, Latin for “Water-Fire,” is a new Cognac from Maison Larsen, and it’s unlike any spirit on the market right now. That’s because this Cognac sees secondary aging in steam-toasted barrels, a technique never used before that involves submerging barrels in water before toasting in a Brasero, causing the water to evaporate. This process is done not once but three times. Larsen claims it is excluding undesired smoky notes and enhancing the vanilla and mocha qualities in the final spirit by preventing the barrel from ever burning. Sure enough, this Cognac is packed with bold, chocolaty elements, from an aroma of cocoa powder and warm café au lait to rich, Belgian chocolate and roasted hazelnut on the palate that complements a host of classic raisin and baking spice notes. A lovely and unique Cognac at a terrific price point.
