Virginia Distillery Co.’s flagship offering, Courage & Conviction American Single Malt, is actually a blend of three different single malts, each aged in a different cask type: Bourbon, Sherry, and Cuvée. Earlier this year, the distillery expanded its portfolio by bottling each cask type as its own Courage & Conviction single malt, offering fans the unique opportunity to taste the individual elements in their extraordinary blend.
While Bourbon and Sherry cask aging will be familiar to most single malt lovers, Cuvée cask aging may be a new concept for many. It is a process pioneered by Dr. Jim Swan, an important mentor to Virginia Distillery Co. and many other single malt producers around the world. Cuvée Casks, more frequently referred to as “STR” Casks, are created by shaving, re-toasting, and re-charring premium wine casks to energize the wood sugars in the used barrels, imparting more and different flavor compounds into the whisky than a typical ex-wine cask.
At only three years old, Courage & Conviction Cuvée Cask nevertheless showcases just how much flavor can be unlocked from these barrels with a big fruity bouquet of dark raspberry preserves, fresh plums, and vanilla custard dusted with a touch of baking cocoa. The honeyed palate is silky and bright with sweet red fruits and toasted sugar while the finish is long with more candied berries, dried ginger, and baking spice. It’s unlike any American single malt on the market today.
