The Mitchell & Son “Spot whiskeys,” produced by Irish Distillers, are named for the color-coding system once used in the 19th century to designate the age of the whiskey. Yellow Spot is the second oldest offering in the current lineup, aged at least 12 years in a combination of bourbon, sherry, and Malaga wine casks. It is a single pot still whiskey, meaning that it is distilled from a combination of malted and unmalted barley which imparts a spicy character that balances particularly well against the fortified wine notes. A grassy aroma of grilled peaches, raisins, and tea leaves gives way to a rich, honeyed palate of fresh-baked pastry, peppery spice, and toasted sugar. The finish is sweet with easy heat and subtle notes of dark red fruits. Not just a standout Irish whiskey, but a standout whiskey. Period.
