The Pairing: Choucroute and Alsace Riesling

Choucroute Garnie Wants Alsace Riesling

Alsace’s great platter of sauerkraut, sausage and pork has a partner from the same hillsides. Dry Riesling is the local rule for good reason.

Choucroute garnie is the Alsatian winter table in one platter: sauerkraut braised slowly with juniper and white wine, crowned with smoked pork belly, sausages and a ham hock, served with boiled potatoes and sharp mustard. It is generous, salty and sour all at once, and it comes from a region that has the answer growing on the slopes above the kitchen.

Why Riesling

Alsace Riesling is usually dry, with high acidity and a mineral, citrus-peel character. That acidity matches the sourness of the cabbage instead of fighting it, which is where most red wines fail. It also cuts through the smoked pork, while the wine’s fruit stands up to the mustard. The sauerkraut is often braised in Riesling in the first place, so the wine in the glass finishes a conversation the pot already started.

Avoid oaky whites and tannic reds. Tannin and sauerkraut make each other taste metallic.

At the Table

Serve the Riesling cool, around 10°C (50°F), and pour generously; choucroute is a long, unhurried meal. If the platter leans heavily on smoked meats, an older bottle with some development carries the smoke better than a very young one.
