Lobster is sweet, rich and delicate all at once. Whether it is grilled with butter, poached and served cold with mayonnaise, or folded into a thermidor sauce, it needs a wine with enough body to match its richness and enough acidity to keep it from feeling heavy.
Why Pessac-Léognan
The dry whites of Pessac-Léognan, at the northern end of the Graves just south of Bordeaux, are blends of Sauvignon Blanc and Sémillon, usually fermented and aged in barrel. Sauvignon Blanc brings citrus, freshness and an herbal lift. Sémillon brings weight, a waxy texture and the ability to age. Oak adds a subtle, smoky richness.
The combination is ideal for lobster. The texture of the wine matches the sweet flesh, the acidity cuts through butter and cream, and the smoky edge suits a lobster cooked on the grill.
At the Table
Keep the preparation simple: grilled with herb butter or poached and served with a light beurre blanc. Serve the wine at 11 to 12°C (52 to 54°F). A mature bottle shines with a richer sauce.
